The invention relates to aspartic proteases, and particularly to aspartic proteases for plants. Disclosed are modified plant aspartic proteases, and methods for their manufacture, and uses thereof. Particularly contemplated are the uses of aspartic proteases in clotting milk.
Our client's researchers have discovered that the plant aspartic protease cardosin B shows coagulation activity of milk that has improved performance compared with rennets that are currently used for cheese production such as fermented chymosin and microbial rennets. The natural cardosin B protease is found in cardoon flowers which have been used traditionally to produce artesanal cheese. Our client has devised and patented a method of producing synthetic cardosin B which is effective for clotting various milks but is particularly suited to coagulation of sheep and goat milk, which required much lower greenhouse gas emissions to produce.
A patent portfolio is in place (US, EU, CA) that protects the novel synthetic protease and aspects of its production; in addition the patents protect broad applications of the enzymes for clotting milk, which includes cheese production.
This patent portfolio will be of interest to companies operating in the dairy foods market particularly those involved in cheese manufacturing and the supply of industrial rennet products.
