A complete process and equipment layout for obtaining protein isolate from commercially available de-oiled mustard is disclosed. The process involves pre-treatment and conditioning of the raw material followed by solvating the available protein of the substrate and incubation with specially designed ‘solvating mixture’.. The dissolved protein is recovered by way of iso-electric precipitation by neutralization followed by coagulation with steam. The precipitate thus obtained is purified with washings with various chemical agents and finally with freshly dematerialized water. The wet protein isolate is concentrated in a vacuum evaporator and then dried in a hot air drier.
The product is fit for human consumption.
