Allyl isothiocyanate

The invention provides a process of extraction of allyl isothiocyanate (AITC) from Indian mustard seeds utilising enzymatic hydrolysis product of its precursor, glucosinolates with myrosinase enzyme both of which are present naturally within the cells of mustard seeds. Process describes the optimum conditions of both reactants to be exposed to each other resulting into allyl isothiocyanate which is extracted from the reaction mixture through distillation in water and steam.
AITC is generally produced by synthetic means which require expensive chemical reactants and manufacturing equipment leaving behind potentially toxic residues. The process of this invention, instead, extracts the product prodiuced from naturally occuring constituents of Indian mustard oil.
